For dinner, we offer a kaiseki banquet meal featuring “Nagi Wagyu,” a certified Japanese Black beef raised locally in Okayama Prefecture.

What is “Nagi Wagyu”?

At the Wagyu beef competition held once every five years across Japan by the National Wagyu Registration Association , also known as the “Wagyu Olympics,” which attracts approximately 500 cattle, Nagi Beef won second place in the 7th District Beef Division (2012).We hope you will try Nagi Wagyu, which is produced by producers who have a high yield and have pursued delicious Wagyu beef.

Peach sea bream
This red sea bream is raised on white peaches, a local specialty of Okayama Prefecture. It has a refined flavor and texture. At Biharukaku, we offer seasonal dishes such as sashimi, carpaccio, and sea bream shabu-shabu.
Burihira
(produced in Kochi Prefecture)
Yellowtail Hira combines the delicious flavor of yellowtail with the chewy texture and elegant taste of amberjack, and is served in a variety of dishes depending on the season, including sashimi, carpaccio, and dashi shabu-shabu.
Ryoma Tataki
Ryoma Tataki is completely grilled over straw, using only rice straw harvested in the Shimanto River basin as fuel, and is painstakingly hand-grilled section by section by artisans. Enjoy it with Umami sun-dried salt, which is kneaded by hand twice a day without any heat treatment, bringing out the natural umami of the salt.

Nagi Wagyu beef, raised in Nagi Town, Okayama Prefecture, is characterized by its fine texture, beautiful marbling, and tenderness. Please enjoy its melt-in-your-mouth texture. For the main course, we offer Nagi Wagyu teppanyaki steak and shabu-shabu. We also offer dishes made with seafood such as peach snapper and yellowtail flathead, as well as seasonal vegetables.

A luxurious kaiseki meal featuring fresh fish from the sea and seasonal vegetables, made with carefully selected ingredients.

This kaiseki banquet meal allows you to savor the luxury of carefully selected ingredients, using fresh fish and seasonal vegetables, a bounty of the sea. We offer carpaccio and dashi shabu-shabu of “Momodai” (peach sea bream), raised with Okayama's famous white peaches, and “Burihira” (yellowtail), which combines the umami flavor of yellowtail with the chewy texture and refined taste of amberjack. We also offer teppanyaki steak made with Nagi Wagyu beef. Please enjoy each and every dish, carefully selected by our chef.

You can enjoy our homemade grilled rice balls and freshly made rice balls. We recommend customizing your grilled rice balls by serving them with dashi ochazuke (tea broth). Please give it a try.

We have a wide selection of popular homemade sweets, including milk pudding made with Daisen milk and strawberry bavarois. Speaking of Okayama, we also have fruit, of course.

"We promise sincere, happy, and moving hospitality"

He will take up his post in spring 2023. He is originally from Kagamino Town, Okayama Prefecture. Based on the principle of local production for local consumption, he will utilize precious local ingredients from the mountains and seas, and pursue decorations and seasonings that capture the latest trends. Little by little, he will deliver to his customers a “food hospitality” that they have never experienced before.

① About allergens we can accommodate

At Hotel Yunomori Bisyunkaku, we strive to do everything we can to ensure that guests with food allergies can enjoy their meals safely and with peace of mind. Upon request, we can provide menus that cater to the eight allergens listed below: eggs, milk, wheat, shrimp, crab, buckwheat, peanuts, and walnuts. If you have any requests regarding food allergies, please contact us by noon the day before your stay.

② Points to note regarding food allergies

  • When using ingredients manufactured by external vendors, we check the ingredients based on information from the manufacturer.
  • As this dish is prepared in the same kitchen as other menu items and the dishwashing equipment is the same as other menu items, there is a possibility that trace amounts of allergens may be mixed in during the cooking process.
  • Due to the above reasons, the dishes we serve are not completely allergy-friendly. We ask for your understanding.
  • If the food allergy symptoms are severe, we may be forced to refuse your request for your safety.
  • When placing an order, please check the above information and make your final decision.
